Wine:

Driven by top-quality Clairette, the 2023 Les Grands Carmes White (IGP Pays des Bouches-du-Rhône) opens with notes of almond and dried fruit, accented by acacia blossom and a subtle, toasty reduction that adds real charm. The palate continues in the same vein, built on a mineral core with generous texture and depth—entirely unmasked by winemaking tricks. This is a complex, persistent wine, carried by fine, lingering bitterness that adds tension and length.

Vinification:

Hand harvested, partially destemmed, aged on fine lees for 8 months in small oak casks.

Color:

Clear golden yellow.

Nose:

Aromas of dried fruit and almond, with a hint of acacia blossom, all underscored by a slight toasted-grilled reduction.

Palate:

A complex and persistent wine, built on a broad, mineral-driven texture and lifted by refined, lingering bitterness on the finish.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Noble white fish, light creamy sauce, sea bass in salt crust, grilled salmon, delicate Bresse poultry, mature Banon cheese or Spanish Manchego cheese.

Cellar aging:

From now until 2030
