Wine:
Ratafia de Champagne is a liqueur wine made from pinot noir mutated with marc de Champagne, all aged for four years in oak barrels. It is a pure marvel, with an exquisite sweetness, very marked by the fresh grapes aromas, which can be enjoyed on its own or paired with a foie gras, or even with a dessert, a fruit salad or an apple pie for example. A very rare bottle because the estate produces few of them and exports almost all of its production.Vinification:
From 100% pinot noir from the 2018 harvest. Hand harvested. Once the grapes are pressed, a well-defined quantity is taken to elaborate the Ratafia champenois. Then the wine distillate, an alcohol at 94.4 ° obtained from grape juice, the best producers use fine or marc de Champagne, will be mixed with the must of the harvest. It will be put back in a barrel for an ageing of 10 months at least. This one has been patinated by 4 years of ageing in oak barrels.Color:
