Wine:

Gevrey-Chambertin En Croisette 2007 is the top of the range in the set of Gevreys produced by the estate. Its substance is opulent and its oak reinforces the wine's construction on the palate. Somewhere between a premier cru and a grand cru, this is an impressive wine, a wine of character. Enjoy when the mood takes you or lay it down for 10 years.

Vinification:

Sustainable viticulture, harvested in perforated trays. Sorted on the vine with a second table sorting before de-stalking. Pre-fermentation cold maceration at a temperature of 16°C for 4 to 8 days, before the start of fermentation with natural yeasts. Aging in oak casks, of which 60% are new, for 16 months.

Color:

Lovely, dark and sustained garnet colour.

Nose:

Aromas of blackcurrant and red fruit, lightly toasted

Palate:

Powerful and velvety on the palate, the wine is blessed with impressive structure, ideal for laying down.

Temperature:

Serve between 16 and 18°C. Decant 15 mins before drinking.

Food and wine pairing:

Small game, roast quail, strong cheeses.

Cellar aging:

Enjoy up to and including 2020

Jérôme Galeyrand works on magnificent plots of old vines, here he has used all his knowhow to produce authentic wines where he has been able to draw out the best of the terroir and the vintage. Jérome moved to Burgundy in 1996, to the Gevrey plain. Today, he owns 5 hectares spread over the Côte de Nuits: Marsannay, Fixin, Gevrey, etc.
