Vinification Hand harvested from 18 September to 4 October 2017. Fermentation of whole grapes in 51 thermo-regulated stainless steel, wood and concrete vats. Wine is left on the lees for 20 to 25 days. Aged for 12 months in new barrels (33%) and barrels used once or twice previously (67%).
