The tasting
Color Shiny deep purple red.
Nose Powerful aromatic structure with aromas of black fruits, black olives and dried maquis herbs.
Palate The initial impression on the palate is superb, dense, rich and velvety, with silky tannins and a perfectly controlled balance. In addition to the long, pleasant persistence, the retro-olfaction is elegant, with flavors of ripe red fruit.

Temperature Serve between 14 and 16°C.
Food Hare à la royal, braised beef cheek with a little anchovy, sautéed lamb with black olives, beet tartar and blackcurrant condiment.

The estate and the wine Château Ollieux-Romanis is far more than just a staple of its region—under the guidance of Pierre Bories, it has become one of the most respected names in the Languedoc. Certified organic, the estate uses only native yeasts, and the wines are matured in both barrels and large wooden casks to enhance complexity and structure. Today, the domaine is a goldmine of honest, terroir-driven wines that remain true to their roots and speak clearly of their origin.
Wine A favorite of our Selection Committee and rated 92/100, the 2022 Corbières-Boutenac Cuvée Prestige Red delivers an exceptional burst of dark fruit aromas, layered with notes of tapenade, black olive, and dried herbs—hallmarks of beautifully ripe Carignan. On the palate, this expressive and aromatic wine is perfectly balanced by a generous, velvety structure supported by silky tannins. It’s a superbly crafted wine, with no excess weight—just pure elegance, freshness, and a seamless flow of gorgeous black fruit flavours. A brilliant pairing for slow-cooked dishes like braised beef cheeks or lamb stew with black olives.
Vinification Harvested by hand. Vinification with indigenous yeasts. Vatting from 12 to 18 days. Aged 50% between 6 and 12 months in barrels of 1 to 5 wines and 50% in stainless steel tanks.
