Hand harvested. Plots in 3 climates: Bellevue, Côte du Py and Roche Noire. Slow maceration for 3 to 4 weeks, fermentation punctuated by punching down and pumping over. Aged for 10 months in concrete vats and new oak barrels, from 1 to 2 wines in the XVIIᵉ century cellar (wood from the Nivernais, Limousin and Allier forests). |
