Wine:

A model of Barolo, the 2018 Red Serralunga d'Alba Barolo combines luscious morello cherry and toasty aromas with a refined, infused and delicate palate, marked by the presence of firm tannins. It is a wine to be decanted before drinking to refine its substance and which will evolve beautifully over time. To be reserved on a piece of lamb or beef.

Vinification:

Manual harvesting. Fermentation and maceration in cement vats for about 15 to 20 days at temperatures ranging from 27 to 30°C. Aging for 18 to 30 months in Slovenian oak barrels followed by at least 6 months in the bottle.

Color:

Bright brick red.

Nose:

Subtly perfumed with notes of red fruits and morello cherry

Palate:

Rich and sophisticated, this wine boasts delicate tannins and a delicate and infused palate. Over the years, the tannins will acquire a certain patina and the elegant texture will give way to a persistent and pleasant finish.

Temperature:

Serve at 16 to 18°C.

Food and wine pairing:

Creamy Risotto with Parmesan cheese and Parma ham chips, beef ravioli and sun-dried tomatoes with pecorino sauce, chocolate hazelnut desserts.

Cellar aging:

From now until 2028 and beyond for enthusiasts.
