Vinification:

Harvested by machine early in the morning, part of the wine is vinified as whole grapes, without the addition of yeast. Unfined, unfiltered wine.

A precise bouquet featuring Mediterranean notes of wild herbs, black fruits, spices, and hints of wild berries.

Palate:

A wine with a distinct southern character, offering generous flavors in a harmonious, well-balanced, and finely crafted palate.

Continuing his father’s philosophy of minimal intervention, Sylvain combines tradition with modernity. His gentle vinification techniques result in radiant Provençal whites and refreshing reds, enhanced by meticulous aging in amphorae and barrels—a testament to the estate's commitment to excellence.
