Wine:

Made from pure Rôlle grapes, the 2022 white Le Paradou IGP Méditerranée is a wonderful summer wine, with a pleasant varietal dimension based on notes of wisteria and hawthorn, white fruit and aniseed. The airy, semi-powerful structure retains excellent acidity and plenty of freshness, in a perfectly ripe southern register, with a frank, sincere palette. This is a very well-made white to accompany a mixed salad or grilled fish with fennel. In Magnum format, conviviality is at its best. Rated 90/100 by the committee.

Vinification:

Hand harvested. Pressing and settling at low temperature for almost 15 hours. Aged in stainless steel vats.

Color:

Bright pale yellow.

Nose:

Varietal aromas, with notes of wisteria, white fruit, aniseed and fennel.

Palate:

Pure and clean, we appreciate this airy freshness right from the palate, with its invigorating acidity, a wine of conviviality.

Temperature:

Serve between 10 and 12°C.

Mixed salad, grilled fish and fennel, marinated chicken skewer.
